The nature of a rum shop has evolved with the rolling growth of Barbados and Bombas is a prime example. Owner Wayne is no stranger to international foods and he is not afraid to show it with his herbs and spices. The fresh fish is never dry and with a variety from your usual mahi-mahi to the rarer angelfish, the menu is long and interesting. The key is in what they do with their fish. The cocktail of tastes in each bite is a big step above the rest and deserves all the praise in the world.
Sides are simple and on the expensive side but the drinks more than compensate. Excellent wine choices, brilliant cocktails and great service. If this is where rumshops are going, I’m coming with them.
